基于麦氏酸活化呋喃的鱼肉新鲜度指示卡研究

传统的肉类新鲜度指示卡采用pH型指示剂,受环境因素影响大,容易造成假阳性结果。本研究以麦氏酸活化呋喃(Meldrum's activated furan,MAF)为挥发性胺指示剂,聚氯乙烯(Polyvinyl chloride,PVC)为载体,设计了一种用于检测鱼肉新鲜度的MAF/PVC薄膜。通过旋转涂布法制备薄膜,以NH3为模型物,考察了薄膜的传感性能。结果表明,MAF质量含量为15%、旋转涂布速度为2000 r/min时制得的薄膜对NH3传感效果最好。以MAF/PVC薄膜为新鲜度指示卡,贴于装有鲜鱼肉的托盘包装内。测定MAF/PVC薄膜的亮度(L)、红色度(a)、黄色度(b)值,并根据MAF/PVC薄膜响应前后的Lab值计算色差值(ΔE);同时,测定鱼肉样品中的总挥发性盐基氮(Total volatile basic nitrogen,TVB-N)含量。结果表明,MAF/PVC薄膜的ΔE值变化趋势与样品中TVB-N含量具有良好的相关性,可准确、快速指示鱼肉的新鲜度,在水产品新鲜度检测中具有良好的应用前景。
